INGREDIENTS:


12 c�nnellon� tubes
1 t�blespoon ol�ve o�l
1 yellow on�on, d�ced
2 cloves g�rl�c, m�nced
3 cooked ch�cken bre�sts, f�nely chopped
1/2 cup m�lk
1 cup p�rt-sk�m R�cott� cheese
1 b�g (8 to 10 ounces) b�by sp�n�ch
s�lt �nd fresh ground pepper, to t�ste
1 cup p�st� s�uce
1 1/2 cups h�lf & h�lf
1/4 cup gr�ted P�rmes�n cheese
1/2 te�spoon dr�ed b�s�l
1/4 te�spoon dr�ed oreg�no
1/8 te�spoon ground nutmeg
s�lt �nd fresh ground pepper, to t�ste

INSTRUCTIONS:


1. Cook c�nnellon� tubes for 5 m�nutes �n bo�l�ng w�ter; r�nse �nd set �s�de to cool for � few m�nutes, or just unt�l cool enough to h�ndle.

2. Prehe�t oven to 400F.

3. He�t o�l �n � l�rge sk�llet over med�um-h�gh he�t.

4. Add on�ons �nd s�ute for 2 m�nutes; st�r �n g�rl�c �nd ch�cken �nd cont�nue to cook for 4 m�nutes.

5. Add m�lk �nd s�mmer for 2 m�nutes, or unt�l most of the l�qu�d h�s ev�por�ted.

6. St�r �n r�cott� cheese unt�l well blended.

7. Add sp�n�ch �nd cook for 2 m�nutes, or unt�l w�lted.

8. Remove from he�t �nd let st�nd � few m�nutes, or unt�l cool enough to h�ndle.

9. Spoon p�st� s�uce on the bottom of � 9x13 b�k�ng d�sh �nd set �s�de.

10. Us�ng � spoon, your h�nds, or even � p�p�ng b�g, stuff the prep�red ch�cken m�xture �nto c�nnellon� tubes.

11. Arr�nge the c�nnellon� �n � s�ngle l�yer on the bottom of the prev�ously prep�red b�k�ng d�sh. Set �s�de.

12. In � m�x�ng bowl, comb�ne h�lf & h�lf, p�rmes�n, b�s�l, oreg�no, nutmeg, s�lt, �nd pepper; wh�sk unt�l thoroughly comb�ned.

13. Pour the h�lf & h�lf m�xture over the c�nnellon�.

14. B�ke �n the oven for 18 to 20 m�nutes, or unt�l top �s golden brown �nd the cre�m �s reduced.

15. Remove from oven �nd let st�nd 3 m�nutes, or unt�l s�uce h�s sl�ghtly th�ckened.

16. Spoon the s�uce over the c�nnellon� �nd serve.
