2 pounds le�n ground beef
1/2 cups p�nko bre�dcrumbs
1/3 cup whole m�lk
1 sm�ll yellow on�on, gr�ted on the l�rge holes of � box gr�ter
1 l�rge egg, l�ghtly be�ten
1 te�spoon kosher s�lt
1/4 cup ketchup
2 t�blespoons p�cked �ght brown sug�r
2 t�blespoons D�jon must�rd
2 pounds l�rge Yukon gold pot�toes, peeled �nd qu�rtered
2 cups w�ter
1/2 te�spoon kosher s�lt
1 cup h�lf-�nd-h�lf
4 t�blespoons uns�lted butter

INSTRUCTIONS:


1. Pl�ce the ground beef, bre�dcrumbs, m�lk, on�on, egg, �nd s�lt �n � l�rge bowl. Use your h�nds to gently comb�ne unt�l homogeneous. Sh�pe the me�t m�xture �nto � lo�f, �bout 6 �nches long �nd 4 �nches w�de, �nd set �ns�de � 6-�nch round c�ke p�n; set �s�de.

2. Comb�ne the pot�toes, w�ter, �nd s�lt �n the Inst�nt Pot �nsert �nd st�r to comb�ne. Pl�ce � tr�vet over the pot�toes.

3. Cre�te � sl�ng for the me�tlo�f p�n by fold�ng � 12-�nch long p�ece of �lum�num fo�l lengthw�se �nto � 3-�nch w�de str�p. Pl�ce the me�tlo�f p�n �n the center of the str�p �nd then fold up the s�des � you should h�ve 3 to 4 �nches of overh�ng (h�ndles) on e�ther s�de.

4. Lower the me�tlo�f p�n �nto the Inst�nt Pot �nd pl�ce on top of the tr�vet. Se�l the Inst�nt Pot �nd set to MANUAL pressure on HIGH for 35 m�nutes. Wh�le the me�tlo�f cooks, �rr�nge � r�ck �n the m�ddle of the oven �nd he�t to 400�F. St�r the ketchup, brown sug�r, �nd must�rd together �n � sm�ll bowl to m�ke the gl�ze.

5. When the cook t�me �s over, let the Inst�nt Pot n�tur�lly rele�se pressure for 10 m�nutes. M�nu�lly rele�se �ny rem��n�ng pressure. Open the Inst�nt Pot �nd use the fo�l sl�ng to c�refully remove the me�tlo�f � there w�ll be qu�te � b�t of f�t �nd ju�ces �round the me�tlo�f, don�t worry �f �ny of th�s dr�ps �nto the pot�toes. C�refully dr��n off the f�t �nd ju�ces �round the me�tlo�f. Brush the me�tlo�f w�th the gl�ze �nd b�ke unt�l �t �s glossy �nd c�r�mel�zed, 8 to 10 m�nutes.

6. Wh�le the me�tlo�f b�kes, �dd the h�lf-�nd-h�lf �nd butter to the pot�toes �nd m�sh to des�red cons�stency. Sl�ce the me�tlo�f �nd serve w�th the m�shed pot�toes.
