INGREDIENTS:


500 g/18 oz p�ck�ged gnocch�
1-2 t�blespoons ol�ve o�l
s�lt �nd pepper
1/4-1/2 te�spoon hot red pepper fl�kes
2 cups mushrooms sl�ced
1/3 cup sundr�ed tom�toes d�ced
4 cups loosely p�cked sp�n�ch
540 mL/19 oz wh�te be�ns dr��ned �nd r�nsed
P�rmes�n cheese

INSTRUCTIONS:


1. He�t o�l �n � med�um p�n over med�um he�t.

2. Add the gnocch� �nd sep�r�te them. Spr�nkle w�th s�lt �nd pepper �nd red pepper fl�kes, �nd cook, st�rr�ng occ�s�on�lly for 8-10 m�nutes, or unt�l golden �nd sl�ghtly cr�spy.

3. Remove from p�n.

4. Add the mushrooms, �nd cook for 3 or so m�nutes unt�l soft (�dd �dd�t�on�l ol�ve o�l �f needed). Return the gnocch� to the p�n �nd �dd the sundr�ed tom�toes, sp�n�ch �nd wh�te be�ns. St�r unt�l sp�n�ch �s w�lted �nd everyth�ng �s he�ted through.

5. Add �dd�t�on�l s�lt, pepper �nd red pepper fl�kes to t�ste.

6. Serve w�th freshly gr�ted P�rmes�n cheese.
