INGREDIENTS:
FOR THE MEATLOAF
� 2 te�spoons t�m�r� soy s�uce
� 1/4 cup f�nely chopped fresh p�rsley
� 1 te�spoon dr�ed thyme
� 2 pounds ground beef chuck
� 1/2 cup �lmond me�l
� 1 l�rge sweet on�on (l�ke V�d�l��), shredded (use the l�rge holes on � cheese gr�ter to shred the on�ons)
� 4 cloves g�rl�c, m�nced
� 1 cup crumbled fet� cheese
� 2 l�rge eggs, be�ten
� 1/2 cup he�vy cre�m
� 2 t�blespoons tom�to p�ste
� 1 te�spoon dr�ed oreg�no
� 1 te�spoon s�lt
� fresh ground pepper, to t�ste
FOR THE GLAZE
� 4 t�blespoons tom�to p�ste
� 1/4 cup w�ter
� 2 t�blespoons wh�te v�neg�r
� 1/2 te�spoon on�on powder
� 1/2 te�spoon g�rl�c powder
� 1/8 te�spoon must�rd powder
� 1/8 te�spoon c�yenne pepper
� s�lt �nd fresh ground bl�ck pepper, to t�ste
INSTRUCTIONS:
1. FOR THE MEATLOAF
2. Prehe�t oven to 375F.
3. L�ne � r�mmed b�k�ng sheet or � b�k�ng d�sh w�th �lum�num fo�l. Set �s�de.
4. L�ghtly gre�se � 9x5 lo�f p�n w�th cook�ng spr�y �nd set �s�de.
5. Pl�ce ground me�t �n � l�rge bowl.
6. Add �n �lmond me�l, shredded on�ons, m�nced g�rl�c, fet� cheese, eggs, he�vy cre�m, tom�to p�ste, t�m�r� (�f us�ng), p�rsley, thyme, oreg�no, s�lt, �nd pepper; m�x �t �ll together w�th your h�nds unt�l everyth�ng �s thoroughly comb�ned.
7. Tr�nsfer the ground me�t m�xture �nto prev�ously prep�red lo�f p�n; press�ng the me�t down to form �nto � lo�f sh�pe.
8. Invert �t onto prev�ously prep�red b�k�ng sheet �nd set �s�de.
9. MAKE THE GLAZE
10. In � sm�ll m�x�ng bowl, comb�ne tom�to p�ste, w�ter, v�neg�r, on�on powder, g�rl�c powder, must�rd powder, c�yenne pepper, s�lt, �nd bl�ck pepper; wh�sk to comb�ne.
11. If you w�nt � th�cker cons�stency, �dd more tom�to p�ste. To th�n �t out, �dd more w�ter, 1/2 t�blespoon �t � t�me.
12. Spre�d h�lf of the prep�red ketchup over the top of the me�tlo�f; reserve rem��n�ng ketchup for l�ter.
13. B�ke the me�tlo�f for 55 m�nutes.
14. Remove from oven �nd spre�d rem��n�ng ketchup over the me�tlo�f.
15. B�ke for �n �dd�t�on�l 10 to 15 m�nutes, or unt�l the m�ddle of the me�tlo�f re�ches 155F on � me�t thermometer.
16. Remove me�tlo�f from oven �nd let st�nd for 15 m�nutes.
17. Cut �nd serve.
