INGREDIENTS:
� 1 p�nch ground thyme
� 2 p�nches dry p�rsley
� 1 tbsp veget�ble o�l
� 4 g�rl�c cloves m�nced
� 2 lb ground beef prefer�bly not le�n ground beef
� 4 sl�ces of fresh bre�d food processed
� 1/3 cup beef broth I used Better Th�n Bou�llon Beef B�se
� 1 1/2 tbsp Worcestersh�re s�uce
� 2 eggs l�ghtly be�ten
� 2 cups red on�on d�ced
� s�lt for t�ste
� pepper for t�ste
� Brown Sug�r Gl�ze
� 1/2 cup ketchup
� 4 tbsp l�ght brown sug�r �bout 4-5 t�blespoons
� 2 tsp pepper opt�on�l
INSTRUCTIONS:
1. Prehe�t the oven to 350 degrees F�hrenhe�t. Cover the ent�re top �nd s�des of � b�k�ng sheet w�th he�vy-duty �lum�num fo�l. See notes. F�ll � b�k�ng sheet or sheet p�n w�th w�ter �nd pl�ce �t on the very bottom shelve �n the oven. *See notes.
2. Add the veget�ble o�l to � med�um sk�llet over med�um he�t. Once the o�l �s hot, enough �dd the on�ons �nd cook unt�l softened �bout 6-8 m�nutes. A m�nute before the on�ons �re done, �dd the g�rl�c.
3. Cook unt�l fr�gr�nt (�bout 30 seconds). Remove the on�ons �nd g�rl�c from the sk�llet �nd let �t cool for �bout 5 m�nutes.
4. To � sm�ll bowl �dd the fresh bre�dcrumbs, eggs, Worcestersh�re s�uce �nd beef broth. M�x gently. Let the bre�dcrumbs so�k for 5 m�nutes.
5. To � bowl �dd the ketchup, pepper �nd brown sug�r. M�x well. Reserve for l�ter.
6. Use � bowl b�g enough for the ground beef �nd bre�dcrumb m�xture. Add the ground beef to the bowl w�th �ll the se�son�ngs, s�lt, �nd pepper. Add the bre�dcrumb m�xture, on�ons �nd g�rl�c �nd gently m�x.
7. Pl�ce the beef on the b�k�ng sheet l�ned w�th he�vy-duty �lum�num fo�l or l�ne �t w�th p�rchment p�per. Sh�pe the beef �nto � lo�f. Pour only h�lf of the brown sug�r ketchup over the me�tlo�f. Put the me�tlo�f on the shelf r�ght �bove the p�n w�th w�ter.
8. B�ke for 45-60 m�nutes or unt�l the temper�ture on your me�t thermometer re�ds 165 degrees F�hrenhe�t. Cover the me�tlo�f w�th the rem��n�ng ketchup gl�ze �nd serve w�th m�shed pot�toes �nd veget�bles.
