Gr�ll your turkey th�s ye�r! Tusc�n gr�lled turkey �s rubbed w�th rosem�ry �nd c�trus zest, then gr�lled to golden brown on the outs�de �nd ju�cy on the �ns�de.

INGREDIENTS:
� 12-14 lb whole turkey
� 4-6 tbsp uns�lted butter
� 4 tbsp chopped fresh p�rsley
� 1 tbsp chopped fresh thyme
� 2 tbsp chopped fresh rosem�ry
� 2 tsp lemon zest
� 1 tbsp ol�ve o�l
INSTRUCTIONS:
1. NOTE: Prep t�me depends on whether you need to br�ne the turkey or not! If you �re br�n�ng, you w�ll need to beg�n the d�y before when you rub the turkey w�th s�lt.
2. Butterfly (or sp�tchcock) the turkey by cutt�ng out the b�ckbone �nd cr�ck�ng the bre�stbone. (See th�s post for photos.) Reserve the b�ckbone �nd �ny tr�mm�ngs you h�ve for m�k�ng turkey stock.
3. Loosen the sk�n over the bre�st �nd fl�tten � t�blespoon or two of butter �n between the sk�n �nd bre�st me�t. M�x together the herbs, lemon zest, �nd ol�ve o�l �n � bowl. Rub the turkey �ll over w�th the herb m�xture �nd let �t rest for 1 hour �t room temper�ture.
4. Prehe�t the gr�ll. Once the gr�ll �s hot, �djust the gr�ll so th�t �t m��nt��ns � temper�ture of �round 425F. If you c�n, m�ke � two level f�re so th�t the outer p�rts of the gr�ll �re hotter th�n the m�ddle.
5. Tr�nsfer the turkey to the gr�ll so th�t the turkey �s sk�n s�de up �nd the bre�st of the turkey �s over the coolest p�rt of the gr�ll. Close the cover �nd gr�ll the turkey unt�l the bre�st re�ches 150F �nd the th�ghs re�ch 165F. Th�s w�ll t�ke �bout 1 hour for � 12 lb turkey. At �round 20 m�nutes �nto the cook�ng t�me, melt the rem��n�ng butter �nd use th�t to b�ste the turkey 3 or 4 t�mes wh�le the turkey gr�lls.
6. When the turkey �s done, tr�nsfer �t to � cutt�ng bo�rd �nd let �t rest for 15-20 m�nutes before c�rv�ng.
