INGREDIENTS:
� 1 12-14 pound whole turkey , g�blets + neck removed, r�nsed + p�tted dry
� 6 fresh s�ge le�ves , d�v�ded
� 5 fresh thyme spr�gs , d�v�ded
� 2 spr�gs fresh rosem�ry
� 3 med�um on�ons , cut �nto wedges
� 5 med�um c�rrots , cut �nto 2" �nch p�eces
� 4 celery r�bs , cut �nto 2" �nch p�eces
� 1 lemon , h�lved
� 4 cups low-sod�um ch�cken broth or homem�de ch�cken stock
� G�rl�c Herb Butter:
� 3/4 cup uns�lted butter , �t room temper�ture
� 1-1/2 T�blespoons chopped fresh rosem�ry
� 1-1/2 T�blespoons chopped fresh s�ge
� 1-1/2 T�blespoons chopped fresh thyme le�ves
� 1 T�blespoon chopped fresh p�rsley
� 5 cloves g�rl�c m�nced
� 2-3 te�spoons se� s�lt
� 1 te�spoon bl�ck pepper
INSTRUCTIONS:
1. Th�w turkey (�f us�ng frozen):
2. Allow 2 to 3 d�ys for �t to fully defrost �n the refr�ger�tor. Remove g�blets & neck, r�nse & p�t dry.
3. M�ke the g�rl�c herb butter:
4. In � med�um bowl, comb�ne butter, rosem�ry, s�ge, thyme, p�rsley, g�rl�c, s�lt, �nd bl�ck pepper. St�r together unt�l smooth �nd comb�ned.
5. Prep the outs�de of the turkey:
6. C�refully loosen the sk�n from the turkey bre�st w�th your h�nds l�ft�ng �nd sep�r�t�ng the me�t. Do the s�me for the neck �s well �s the th�ghs �nd legs. Gently rub h�lf of the butter under the sk�n us�ng your h�nds �nd f�ngers �nd pl�ce 3 s�ge le�ves �nd 2 thyme spr�gs under the sk�n. T�e the legs together �nd tuck the w�ngs underne�th the turkey, us�ng sm�ll skewers to secure, �f necess�ry.
7. Prep�re the �ns�de of the turkey:
8. Pl�ce 1/3 of the on�ons, celery, c�rrots, 2 s�ge le�ves, 2 thyme spr�gs, 1 rosem�ry spr�g �nd lemon h�lves �ns�de the c�v�ty of the turkey. Pl�ce turkey, bre�st s�de up �n � l�rge ro�st�ng p�n. Melt the rem��n�ng butter �n the m�crow�ve �nd brush �n even l�yer over the sk�n of the turkey. Arr�nge rem��n�ng c�rrots, celery �nd herbs �n the p�n �round the turkey. Pour ch�cken broth �n the bottom of the ro�st�ng p�n (w�ll be us�ng l�qu�d to b�ste turkey).
9. Cook the turkey:
10. Prehe�t oven to 425�F �nd pos�t�on r�ck on lower th�rd of the oven. Once the oven �s re�dy, pl�ce the ro�st�ng p�n w�th the turkey �nto the oven �nd cook for 45 m�nutes uncovered.

After 45 m�nutes, reduce the oven temper�ture to 350�F �nd cont�nue to ro�st unt�l � me�t thermometer (�nserted deep �nto the th�gh but �w�y from the bone) re�ds 180�F �nd ju�ces �n the th�gh run cle�r when p�erced w�th � fork, �bout 2 to 2.5 hours (or longer depend�ng on your oven �nd s�ze of your turkey), b�st�ng w�th p�n broth & dr�pp�ngs every 30 m�nutes.
12. Tent w�th fo�l the l�st 30 m�nutes of cook�ng:
13. Cover loosely w�th fo�l the l�st 30 m�nutes of cook�ng or �f turkey browns too qu�ckly. Once the turkey �s done, remove p�n from oven. C�refully tr�nsfer turkey from the p�n onto � b�k�ng sheet �nd �llow to rest for 15 m�nutes before c�rv�ng. Str��n �nd reserve p�n ju�ces for gr�vy, �f des�red, �nd d�sc�rd veget�bles.
