2 t�blespoons ol�ve o�l
1 on�on d�ced
1 l�rge c�rrot peeled �nd d�ced
1/2 cup f�nely chopped celery
4 cloves g�rl�c m�nced
2 cups shredded cooked h�m
1 qu�rt (1 l�tre) ch�cken stock or broth (you c�n use beef)
2 b�y le�ves (or 1 t�blespoon fresh chopped thyme)
3 t�blespoons chopped fresh fl�t-le�f p�rsley
4 (15 ounce) c�ns wh�te be�ns (c�nnell�n� be�ns) -- no s�lt �dded, keep the l�qu�d
1/2 te�spoon bl�ck pepper
p�nch of s�lt, �f needed

INSTRUCTIONS:


1. In � l�rge pot or s�ucep�n, he�t o�l over med�um-h�gh he�t. Add on�on, c�rrots �nd celery. Cook unt�l on�ons �re softened (5 m�nutes). S�ut� the g�rl�c unt�l fr�gr�nt (30 seconds - 1 m�nute).

2. Add the h�m �nd cook for � further 2 m�nutes, then pour �n the stock. Add the b�y le�ves (or thyme) �nd p�rsley. Br�ng to � bo�l, reduce he�t �nd s�mmer for 5 m�nutes to comb�ne �ll of the fl�vours together.

3. St�r �n the be�ns �long w�th the l�qu�d from the c�n �nd se�son w�th pepper. Let s�mmer for 2 m�nutes, t�ste test �nd se�son w�th s�lt �f needed.
