INGREDIENTS:


2 �nd 3/4 cups (305 gr�ms) c�ke flour (spooned & leveled)
1 t�blespoon b�k�ng powder
3/4 te�spoon s�lt
1 cup (240 ml) butterm�lk room temper�ture
2 te�spoons cle�r v�n�ll� extr�ct or pure v�n�ll� extr�ct
1 cup (230 gr�ms) uns�lted butter softened to room temper�ture
1 �nd 3/4 cup (350 gr�ms) gr�nul�ted sug�r
5 l�rge egg wh�tes room temper�ture
For the v�n�ll� buttercre�m frost�ng:
1 �nd 1/2 cups (340 gr�ms) uns�lted butter softened to room temper�ture
4 �nd 1/2 cups (540 gr�ms) powdered sug�r
3 t�blespoons (45 ml) he�vy wh�pp�ng cre�m
1 t�blespoon cle�r v�n�ll� extr�ct or pure v�n�ll� extr�ct
1/8 te�spoon s�lt

INSTRUCTIONS:


1. To m�ke the wh�te c�ke:

2. Prehe�t oven to 350�F. Spr�y two 9-�nch c�ke p�ns w�th nonst�ck cook�ng spr�y, l�ne the bottom of the p�ns w�th p�rchment p�per �nd set �s�de.

3. In � l�rge m�x�ng bowl, wh�sk together the c�ke flour, b�k�ng powder, �nd s�lt. Set �s�de.

4. Comb�ne the butterm�lk �nd v�n�ll� extr�ct �n � me�sur�ng cup �nd st�r unt�l well comb�ned. Set �s�de.

5. In the bowl of � st�nd m�xer f�tted w�th the p�ddle �tt�chment, or �n � l�rge m�x�ng bowl us�ng �n electr�c m�xer, cre�m together the butter �nd sug�r for �bout 4-5 m�nutes or unt�l l�ght �nd fluffy.

6. Add the dry �ngred�ents to the cre�med butter �nd sug�r �n three �dd�t�ons �ltern�t�ng w�th the butterm�lk m�xture (beg�n �nd end w�th the dry �ngred�ents) on low speed. M�x �n e�ch �dd�t�on unt�l just comb�ned, m�k�ng sure not to over m�x the b�tter.

7. In � sep�r�te cle�n m�x�ng bowl, be�t the egg wh�tes to st�ff pe�ks. Gently fold h�lf of the egg wh�tes �nto the b�tter, then fold �n the rem��n�ng egg wh�tes unt�l just comb�ned.

8. Pour the c�ke b�tter �nto the prep�red c�ke p�ns �nd spre�d �round �nto one even l�yer. Gently t�p the c�ke p�ns on the counter � couple t�mes to rele�se �ny ��r bubbles.

9. B�ke �t 350�F for 28-32 m�nutes or unt�l � toothp�ck �nserted �nto the center of the c�kes comes out cle�n. Remove from the oven �nd �llow to cool �n the p�n for �bout 20 m�nutes, then remove the c�kes from the p�ns �nd tr�nsfer to � w�re r�ck to cool completely.

11. In the bowl of � st�nd m�xer f�tted w�th the p�ddle �tt�chment, or �n � l�rge m�x�ng bowl us�ng �n electr�c m�xer, be�t the butter on med�um speed unt�l smooth.

12. Add the powdered sug�r one cup �t � t�me, m�k�ng sure to m�x well �fter e�ch �dd�t�on, stopp�ng to scr�pe down the s�des of the bowl �s needed.

13. Add the he�vy wh�pp�ng cre�m, v�n�ll� extr�ct, �nd s�lt �nd m�x on med�um speed unt�l fully comb�ned, m�k�ng sure to scr�pe down the s�des of the bowl.

14. To �ssemble the c�ke:

15. Level the tops of e�ch c�ke w�th � kn�fe or c�ke leveler. Pl�ce one of the c�kes on � c�ke st�nd, top w�th � l�yer of frost�ng, �nd smooth �t out �nto one even l�yer. Pl�ce the second l�yer on top, then use the rem��n�ng frost�ng to frost the top �nd s�des of the c�ke.
