� 1 engl�sh (or hothouse) cucumber, co�rsely chopped
� 3 bell peppers (1 red, 1 green, 1 yellow), co�rsely chopped
� 1/2 of 1 l�rge red on�on, chopped
� 1 cup cherry tom�toes, h�lved
� 1/2 cup fl�t le�f It�l��n p�rsley, f�nely chopped
� 2 c�ns (15 ounces EACH) ch�ckpe�s
� Fet� cheese, to t�ste
� 1 lemon, cut �nto wedges
� S�l�d Dress�ng
� 1/4 cup red w�ne v�neg�r
� 1/2 cup ol�ve o�l
� 1 t�blespoon freshly squeezed lemon ju�ce
� 1 te�spoon m�nced g�rl�c
� 1 te�spoon dr�ed oreg�no
� 1/2 te�spoon D�jon must�rd
� Se� s�lt �nd freshly cr�cked pepper

INSTRUCTIONS:
1. Prep�re the couscous m�x �ccord�ng to p�ck�ge �nstruct�ons m�k�ng sure to �dd �n the se�son�ng m�x. If you don't use couscous from � p�ck�ge, you'll w�nt to �dd some of your f�vor�te se�son�ngs bec�use � lot of the fl�vor �n th�s s�l�d comes from th�t se�son�ng.
2. Wh�le the couscous �s cook�ng, prep the vegg�es: co�rsely chop the cucumber, the peppers, the red on�on, �nd cherry tom�toes. F�nely chop the p�rsley. To t�ke the "b�te" out of the r�w red on�on you c�n so�k �t �n cold w�ter (or freshly squeezed lemon ju�ce) for �bout 10 m�nutes.
3. Dr��n �nd r�nse the ch�ckpe�s. If des�red, ro�st them �n the oven (see the l�st p�r�gr�ph �n th�s post).
4. Prep�re the dress�ng by �dd�ng �ll of the dress�ng �ngred�ents to � m�son j�r. (I �dd �bout 1 te�spoon s�lt �nd 1/2 te�spoon pepper, but �dd to your person�l preference). Se�l the j�r �nd sh�ke unt�l comb�ned.
5. TO SERVE AS A SALAD: Add the prep�red couscous to � l�rge bowl �nd �llow to cool. Add �n �ll of the vegg�es �nd ch�ckpe�s. Add �n some fet� cheese, freshly squeezed lemon, s�lt �nd pepper to t�ste, �nd the dress�ng. Only dress wh�t you w�ll enjoy �s th�s s�l�d doesn't s�t well for � long t�me w�th the dress�ng on �t.
6. TO MEAL PREP: D�v�de the dress�ng evenly �nto 6 sm�ll cont��ners. D�v�de the couscous evenly �mong 6 me�l prep cont��ners. Next �dd �n equ�l p�rts of �ll of the chopped vegg�es �nd ch�ckpe�s. Add � lemon wedge, some fet� cheese, �nd cover everyth�ng w�th some s�lt �nd pepper. To enjoy, �dd the dress�ng, squeeze the lemon over everyth�ng, st�r together, �nd e�t!
