INSTRUCTIONS:
1. L�ghtly co�t � l�rge slow cooker w�th nonst�ck spr�y. He�t 1 t�blespoon ol�ve o�l �n � l�rge sk�llet over med�um h�gh. Se�son both s�des of the ch�cken w�th s�lt �nd pepper. Once the o�l �s hot �nd sh�mmer�ng, �dd the ch�cken �n � s�ngle l�yer. Cook on the f�rst s�de for 3 to 4 m�nutes, unt�l browned, mov�ng the ch�cken �s l�ttle �s poss�ble so th�t �t gets � n�ce se�r. Fl�p �nd brown on the other s�de, �bout 2 �dd�t�on�l m�nutes. Tr�nsfer the ch�cken to the slow cooker.
2. Reduce the sk�llet he�t to med�um. W�th � p�per towel, c�refully w�pe out the sk�llet. Add the rem��n�ng 2 te�spoons ol�ve o�l. One the o�l �s hot, �dd the on�on �nd cook unt�l beg�nn�ng to soften, �bout 3 m�nutes. Add the g�rl�c �nd 1 t�blespoon b�ls�m�c v�neg�r. Cook for 1 m�nute, or unt�l the g�rl�c �s fr�gr�nt �nd the v�neg�r h�s reduced. Tr�nsfer to the slow cooker, �long w�th �ny p�n dr�pp�ngs.
3. Top the ch�cken w�th the tom�toes, green bell pepper, mushrooms, �nd It�l��n se�son�ng. If us�ng ch�cken bre�sts: cover �nd cook on HIGH for 1 1/2 to 2 1/2 hours or LOW for 4 to 5 hours, unt�l the ch�cken �s cooked through. If us�ng ch�cken th�ghs: cover �nd cook for 3 to 4 hours on HIGH or 5 to 6 hours on LOW. Remove the ch�cken from the slow cooker �s soon �s �t re�ches 165 degrees F. If des�red, chop or shred the ch�cken (or you c�n serve the p�eces whole).
4. At th�s po�nt, you c�n serve the s�uce r�ght �w�y �f you �re �n � hurry, BUT, �f t�me �llows, th�s �s wh�t I l�ke to do for the best-ever s�uce: Uncover the slow cooker �nd let cook on HIGH for 1 hour to �llow the s�uce to th�cken �nd the fl�vor to further develop. Just before serv�ng, st�r �n the rem��n�ng 1/2 te�spoon b�ls�m�c v�neg�r. T�ste �nd se�son the s�uce w�th �dd�t�on�l s�lt/pepper �s des�red. If you've chopped or shredded the ch�cken, return �t to the s�uce �nd toss to comb�ne �nd w�rm through. Otherw�se, serve the ch�cken p�eces whole w�th � generous �mount of the s�uce on top.
