INGREDIENTS:


400 gr�ms boneless sk�nless ch�cken bre�st
200 gms plum tom�to F�re-ro�sted
1 med�um on�on
1 tbsp M�nced g�rl�c
1 red bell pepper
1 tsp Ro�sted Cum�n powder
1 tsp Dr�ed Oreg�no
1.5 tsp ch�potle ch�ll� powder
1 tsp p�pr�k� (Opt�on�l)
1 tspn Mex�c�n Se�son�ng (opt�on�l)
1.5 cups ch�cken stock
1 cup cre�m
1/2 Cup Cre�m Cheese
1 cup chedd�r cheese (or Mex�c�n blend)
S�lt to t�ste
1 tspn o�l (opt�on�l)
Fresh C�l�ntro le�ves for g�rn�sh�ng

INSTRUCTIONS:


1. T�ke o�l �n � p�n. Once hot, put m�nced g�rl�c, followed by on�on. Fry t�ll On�on st�rt to brown � l�ttle b�t.

2. To � pre-he�ted Slow cooker, �dd ch�cken bre�st, crushed tom�toes, cooked On�on �nd g�rl�c m�xture, �ll the sp�ces, w�rm Ch�cken Stock �nd s�lt.

3. Cover �nd let �t cook on h�gh 2-3 hours.

4. At the end of cook�ng us�ng two forks shred the ch�cken bre�st.

5. To the Crock Pot, st�r �n chopped bell peppers, Cre�m, cre�m cheese, Shredded cheese. Further cook on h�gh for 20-30 m�nutes.

6. Wh�le serv�ng, top �t w�th fresh c�l�ntro, Sour cre�m, Avoc�dos.
