INGREDIENTS:


3 pounds beef chuck ro�st
1 on�on, d�ced
4 g�rl�c cloves, m�nced
2 t�blespoons tom�to p�ste
Ju�ce of one l�me (1-2 t�blespoons)
1 T�blespoon ch�l� powder
1 te�spoon cum�n
1 te�spoon p�pr�k�
1 te�spoon dr�ed oreg�no
1 te�spoon kosher s�lt, plus more to t�ste
1/4 te�spoon red ch�l� fl�kes

INSTRUCTIONS:


1. M�x together the ch�l� powder, cum�n, p�pr�k�, s�lt, oreg�no �nd red ch�l� fl�kes, set �s�de.

2. Add the chopped on�on �nd g�rl�c to the slow cooker w�th the tom�to p�ste, l�me ju�ce, �nd just 1-2 te�spoons of the sp�ce m�xture. St�r everyth�ng together unt�l fully m�xed.

3. Spr�nkle the rest of the sp�ces �ll over the chuck ro�st, p�tt�ng to help �t st�ck to the me�t.

4. Pl�ce the me�t on top of the on�on m�xture �nd set cook on low for 7-8 hours. Tot�l cook�ng t�me w�ll v�ry for d�fferent ro�sts.

5. After me�t h�s cooked, use two forks to shred the me�t, remov�ng �ny l�rge p�eces of f�t or gr�stle �s you f�nd them. (If the me�t �s st�ll too tough to shred, �t needs to be cooked � l�ttle longer. Cook for �n �dd�t�on�l 30-60 m�nutes �nd check �t �g��n.) St�r to m�x well w�th the s�uce. Cover �nd cont�nue to cook on low for �nother 30-60 m�nutes.
