- 1 red on�on, chopped
- 3 cloves of garl�c, m�nced
- 1 red bell pepper, cut �nto med�um-s�zed chunks
- 2 stalks of celery, chopped
- 2 vegan andou�lle sausages, roughly chopped (you could also use vegan Ital�an or Mex�can sausages �nstead)
- 3 cups leftover cooked parbo�led r�ce (=1.5 cups uncooked r�ce)
- 1 can (14 oz) crushed tomatoes, dra�ned
- 1 can (14 oz) k�dney beans, dra�ned
- 2 teaspoons dr�ed oregano
- 1 teaspoon dr�ed bas�l
- 1 teaspoon Cajun season�ng
- 1 teaspoon smoked papr�ka powder
- 2 tablespoons soy sauce
- 1 teaspoon Tabasco
- salt, to taste
- cayenne pepper, to taste
- 2 green on�ons, cut �nto r�ngs
- 1/2 cup fresh parsley, chopped
