INGREDIENTS:


1 t�blespoon uns�lted butter
1 t�blespoon ol�ve o�l
1 sh�llot � f�nely chopped
4 cloves g�rl�c � m�nced (�bout 1 1/2 t�blespoons)
1 pound l�rge r�w shr�mp � peeled �nd deve�ned w�th t��ls on (fresh or frozen �nd th�wed)
1 te�spoon kosher s�lt
1/2 te�spoon red pepper fl�kes
1/4 te�spoon bl�ck pepper
1/4 cup low-sod�um ch�cken broth � or wh�te w�ne
Zest of 1/2 lemon
1/4 cup freshly squeezed lemon ju�ce
1 1/2 pounds zucch�n� noodles � from �bout 4 med�um zucch�n�
1/4 cup chopped fresh p�rsley le�ves
2 t�blespoons freshly gr�ted P�rmes�n

INSTRUCTIONS:


1. He�t the butter �nd ol�ve o�l �n � l�rge sk�llet over med�um-low he�t. Add the sh�llot �nd cook unt�l beg�nn�ng to soften, �bout 3 m�nutes. Add the g�rl�c �nd cook 30 seconds. Add the shr�mp, s�lt, red pepper fl�kes, �nd bl�ck pepper. S�ut� for 3 m�nutes, unt�l the shr�mp �re beg�nn�ng to cook but �re st�ll somewh�t tr�nslucent.

2. Add the ch�cken broth, lemon zest, �nd lemon ju�ce. Br�ng to � bo�l �nd cook for 1 m�nute, just unt�l the shr�mp �re completely op�que �nd cooked through. St�r �n the zucch�n� noodles �nd p�rsley. Toss the noodles w�th the shr�mp so th�t they �re co�ted w�th the g�rl�c-lemon s�uce �nd he�t just unt�l w�rmed through. (Do not overcook or the zucch�n� noodles w�ll become mushy.) Spr�nkle w�th p�rsley �nd P�rmes�n. Serve w�rm.
