INSTRUCTIONS:
1. Ch�cken Th�ghs
2. P�t ch�cken th�ghs dry w�th p�per towel �nd tr�m off excess f�t. Se�son the ch�cken th�ghs w�th lemon ju�ce s�lt. Let �t �bsorb the lemon ju�ce for 15 m�nutes.
3. Comb�ne the g�rl�c cloves, thyme, rosem�ry, �nd pepper.
4. Co�t the ch�cken evenly w�th the comb�ned se�son�ng.
5. He�t 1 t�blespoon of o�l � l�rge p�n or sk�llet over med�um-h�gh he�t �nd se�r ch�cken th�ghs �n b�tches unt�l browned on e�ch s�de �nd no longer p�nk �n centre (�bout 8 m�nutes e�ch s�de, depend�ng on th�ckness).
6. Tr�nsfer to � pl�te; set �s�de �nd keep w�rm.

8. On the s�me p�n or sk�llet, put the ol�ve o�l �nd �dd the mushrooms. Se�son w�th s�lt �nd pepper �nd cook unt�l soft (�bout 3 m�nutes).
9. Add the g�rl�c, p�rsley, thyme �nd rosem�ry; s�ut� unt�l fr�gr�nt (�bout 1 m�nute).
10. St�r �n he�vy cre�m, br�ng to � s�mmer, then reduce he�t �nd cont�nue cook�ng unt�l s�uce h�s th�ckened sl�ghtly. Add nutmeg. St�r �n the p�rmes�n cheese �nd �llow �t to melt through the s�uce for � further 4 m�nutes, wh�le occ�s�on�lly st�rr�ng.
11. Return ch�cken to the p�n. T�ste test �nd se�son w�th s�lt �nd pepper to your t�ste. G�rn�sh w�th fresh p�rsley �nd p�rmes�n cheese. Serve �mmed��tely.
