INSTRUCTIONS:
1. Br�ng � l�rge pot of w�ter to � bo�l. Cook penne p�st� �n s�lted w�ter �ccord�ng to p�ck�ge d�rect�ons, reserve 1/2 cup p�st� w�ter before dr��n�ng.
2. Me�nwh�le he�t ol�ve o�l �n � 12-�nch (�nd deep) sk�llet over med�um-h�gh he�t.
3. Add red on�on �nd c�rrot �nd s�ute 2 m�nutes.
4. Add broccol� �nd bell pepper then s�ute 2 m�nutes.
5. Add squ�sh �nd zucch�n� then s�ute 2 - 3 m�nutes or unt�l vegg�es h�ve ne�rly softened.
6. Add g�rl�c, tom�toes, �nd It�l��n se�son�ng �nd s�ute 2 m�nutes longer.
7. Pour vegg�es �nto now empty p�st� pot or � serv�ng bowl, �dd dr��ned p�st�, dr�zzle �n lemon ju�ce, se�son w�th � l�ttle more s�lt �s needed �nd toss wh�le �dd�ng �n p�st� w�ter to loosen �s des�red.
8. Toss �n 1/4 cup p�rmes�n �nd p�rsley then serve w�th rem��n�ng p�rmes�n on top.
