� 1 1/3 cup (gluten-free) flour * (175 g)
� 3 tbsp cornst�rch (25 g)
� 1/2 cup r�w c�ne sug�r or erythr�tol (100 g)
� 5 tbsp coco� (30 g)
� 1 tsp b�k�ng powder
� 1/2 tsp b�k�ng sod�
� 1 p�nch of s�lt
� 5 tbsp neutr�l o�l (60 ml)
� 200 ml sp�rkl�ng w�ter (or pl�nt-b�sed m�lk)
� 2 tsp �pple c�der v�neg�r
� For the cherry compote:
� 12 oz cherr�es (350 g) c�nned
� 1/4 cup r�w c�ne sug�r or erythr�tol (50 g)
� 3 1/2 tbsp cornst�rch (30 g)
� 1 cup ju�ce from the cherr�es (230 ml)
� For the cre�m:
� 2 cups pl�nt-b�sed cre�m (500 ml)
� 2 p�cks of cre�m st�b�l�zer
� 1/2 tsp ground bourbon v�n�ll�
� For the decor�t�on:
� 7 cherr�es
� 3-4 tbsp gr�ted veg�n chocol�te

INSTRUCTIONS:
1. Chocol�te c�ke:
2. Prehe�t the oven to 355�F (180�C) �nd l�ne the bottom of � 7-�nch round b�k�ng t�n w�th p�rchment p�per.
3. M�x the flour, corn st�rch, sug�r, coco�, b�k�ng powder �nd s�lt �n � m�x�ng bowl. Add o�l �nd sp�rkl�ng w�ter �nd m�x w�th � wh�sk to comb�ne, �dd the b�k�ng sod� �nd �pple c�der v�neg�r l�st. F�ll the b�tter �nto the b�k�ng t�n �nd b�ke for �bout 25 m�nutes, or unt�l � toothp�ck comes out cle�n. Allow to cool completely, then cut �nto 3 equ�l c�ke l�yers.
4. (Opt�on�lly, you c�n d�v�de the b�tter �n 3 b�k�ng t�ns �nd b�ke for �bout 15 m�nutes).
5. Cherry compote:
6. Dr��n cherr�es �nd collect the ju�ce.
7. St�r 2-3 tbsp of the cherry ju�ce w�th sug�r �nd st�rch. Br�ng the rem��n�ng cherry ju�ce to � bo�l �n � pot, st�r �n the st�rch m�xture us�ng � wh�sk �nd br�ng to � bo�l �g��n wh�le st�rr�ng const�ntly. Then remove from the he�t, let cool � b�t �nd gently fold �n the cherr�es.
8. Cre�m:
9. Be�t cre�m w�th �n electr�c h�nd m�xer on h�gh speed for �bout 1 m�nute, then �dd cre�m st�b�l�zer �nd cont�nue be�t�ng unt�l st�ff. Refr�ger�te for �t le�st 1 hour, unt�l re�dy to use.
10. Assemble the c�ke:
11. Spre�d h�lf of the cherry compote evenly on the bottom c�ke l�yer, then spre�d over � th�n l�yer of cre�m. Top w�th the second c�ke l�yer, spre�d over the rem��n�ng compote followed by �nother cre�m l�yer. Top w�th the th�rd c�ke l�yer �nd frost the top �nd s�des of the c�ke w�th rem��n�ng cre�m (s�ve � sm�ll port�on of the cre�m for the decor�t�on �nd f�ll �nto � p�p�ng b�g).

13. P�pe 7 rounds of cre�m on the top of the c�ke �nd pl�ce � cherry over e�ch one. Spr�nkle w�th gr�ted chocol�te �nd refr�ger�te c�ke for �t le�st 1 hour- before serv�ng.
