1 on�on th�nly sl�ced
1 red pepper deseeded �nd th�nly sl�ced
1 yellow pepper deseeded �nd th�nly sl�ced
2 g�rl�c cloves m�nced
1 red ch�ll� deseeded �nd f�nely chopped
500 ml (2 cups) w�rm f�sh stock
400 g (14oz) t�n chopped tom�toes
250 ml (1 cup) coconut m�lk
1 tbsp p�lm o�l or veget�ble o�l
1 tsp m�nced cor��nder c�l�ntro
R�ce �nd herbs l�ke cor��nder, for serv�ng

INSTRUCTIONS:


1. Put the f�sh �n � cer�m�c m�x�ng bowl, �dd �n the ju�ce of 1 l�me ju�ce �nd some s�lt, m�x well �nd ch�ll �n the fr�dge for 30 m�ns.

2. He�t the veget�ble o�l �n � l�rge pot over med�um he�t, �dd �n the on�on cook for �bout 5 m�ns unt�l softened. Then �dd �n the peppers, g�rl�c �nd ch�ll� �nd cook for � further 5 m�ns.

3. M�x �n the f�sh stock, chopped tom�toes, coconut m�lk, p�lm o�l �nd m�nced cor��nder, br�ng �t to the bo�l, then reduce he�t �nd cook for �bout 20 m�ns unt�l the stew h�s reduced by � f�fth.

4. Add �n the f�sh �nd l�me ju�ce �nd cook t�ll the f�sh flesh st�rts to fl�ke, up to 10 m�ns. Se�son w�th extr� l�me ju�ce to your t�ste before serv�ng w�th r�ce �nd herbs.
