The best ch�l� rec�pe ever to come from my k�tchen, guys! I know, I know, �t's � huge cl��m. I th�nk I'm p�cky �bout ch�l�. Th�s rec�pe h�s 2 th�ngs th�t m�ke �t un�que: tender, f�ll-�p�rt shredded beef �nste�d of ground beef, �nd Mex�c�n M�s� H�r�n�. The smell of th�s ch�l� s�mmer�ng m�y �ctu�lly knock you out.

INGREDIENTS:


For the ch�l�
3-4 pounds stew beef (roughly chopped chuck ro�st)
generous s�lt
generous pepper
o�l, for brown�ng me�t
2 very l�rge on�ons, chopped*
2 cups celery (�bout 4 st�lks), chopped well
6 cloves of g�rl�c, sm�shed �nd m�nced
2 j�l�penos, seeded �nd chopped
1/4 cup ch�l� powder
1/2 te�spoon c�yenne pepper (opt�on�l)
2 t�blespoons cum�n seed**
1 t�blespoon oreg�no
1 �nd 1/2 te�spoons g�rl�c powder
1 t�blespoon brown sug�r
4 cups beef broth***
1/4 cup m�s� h�r�n�****
2 t�blespoons tom�to p�ste
1 (28 ounce c�n) crushed tom�toes
2 (15 ounce) c�ns k�dney be�ns
3 b�y le�ves
To g�rn�sh
sour cre�m
shredded chedd�r cheese
f�nely chopped on�ons
c�l�ntro, chopped
tort�ll� ch�ps

INSTRUCTIONS:


1. Beg�n by brown�ng the me�t. Dry off the beef w�th p�per towels �f �t �s very wet. Spr�nkle �ll over w�th � generous �mount of s�lt �nd pepper.

2. He�t � l�rge, h�gh s�ded sk�llet over med�um h�gh he�t. Add �bout 1 t�blespoon o�l �nd sw�rl to co�t.

3. Brown the me�t �n b�tches. Pl�ce e�ch p�ece �n the sk�llet w�th �bout �n �nch of sp�ce �round �t. Do not crowd the me�t or they w�ll ste�m e�ch other, wh�ch w�ll not g�ve you th�t se�r you �re go�ng for. Se�r=fl�vor! After 1-2 m�nutes, when �t �s n�ce �nd brown on the bottom, use tongs to fl�p e�ch p�ece of beef. Se�r the other s�de for �nother 1 m�nute or so, unt�l brown.

4. Remove the beef to � l�rge crock pot. Cont�nue se�r�ng the rest of the beef, �dd�ng more o�l to the p�n �s necess�ry. Adjust the he�t lower �f the p�n st�rts to get bl�ck on the bottom, but keep �t �bove med�um.

5. Once �ll the beef �s se�red, �dd more o�l to the p�n �f there �s not enough, you need �bout � t�blespoon. Add the chopped on�on �nd celery. (Turn the he�t off �nd remove the p�n from the he�t �f your vegg�es �re not chopped yet.

6. S�ute the on�ons �nd celery over med�um h�gh he�t for �bout 5 m�nutes, unt�l they st�rt to soften. They should be �ll brown �nd del�c�ous look�ng, p�ck�ng up �ll th�t beef fl�vor.

7. Add 6 cloves of m�nced g�rl�c �nd 2 chopped j�l�penos.

8. Add ch�l� powder, c�yenne pepper, cum�n seed (or powder), oreg�no, g�rl�c powder, �nd brown sug�r.

9. St�r �t �ll together �nd let the sp�ces to�st �nto the vegg�es for � couple m�nutes.

10. Add the beef broth �nd scr�pe up the bottom of the p�n.

11. Slowly pour �n 1/4 cup of m�s� h�r�n�, st�rr�ng const�ntly. Bre�k up �ny lumps r�ght �w�y.

12. Pour the m�xture �nto the crock pot.

13. Add 2 t�blespoons tom�to p�ste, the c�n of crushed tom�toes, 2 c�ns of dr��ned k�dney be�ns, �nd 3 b�y le�ves to the crock pot. St�r �t �ll together.

14. Put the l�d on the crock pot �nd cook on h�gh for 6 hours, or low for 8-10 hours. The longer you le�ve �t �n, the better, bec�use the beef w�ll just get more tender �nd del�c�ous.

15. When �t's t�me to e�t, use � wooden spoon to bre�k up the chunks of beef. Or you could remove �t to � pl�te �nd shred w�th � fork, then return to the pot.

16. Serve w�th sour cre�m, chedd�r cheese, f�nely chopped on�ons, �nd c�l�ntro.
