� SAUCE INGREDIENTS:
� 1 T m�nced fresh g�nger (g�nger from � j�r �s f�ne for th�s)
� 1 T m�nced fresh g�rl�c (g�rl�c from � j�r �s f�ne for th�s)
� 1/4 cup smooth n�tur�l pe�nut butter (Choose pe�nut butter w�th the le�st sug�r, I l�ke Ad�ms 100% N�tur�l Pe�nut Butter.)
� 1/4 cup tom�to s�uce
� 3 T soy s�uce (use gluten-free soy s�uce �f needed)
� 3 T Stev�� �n-the-r�w Gr�nul�ted, Monkfru�t Sweetener, or sweetener of your cho�ce

INSTRUCTIONS:
1. Tr�m �ny v�s�ble f�t from the pork s�rlo�n ro�st �nd cut w�th the gr��n �nto sever�l p�eces (so you c�n cut sl�ces �g��nst the gr��n when the me�t �s done); then rub the ro�st on �ll s�des w�th Penzey�s Pork Chop Se�son�ng, or � se�son�ng m�x of your cho�ce th�t�s good on pork. (You could use just � blend of g�rl�c powder, s�lt, �nd pepper �f you don�t h�ve �nyth�ng else th�t w�ll work.)
2. He�t the o�l �n � he�vy fry�ng p�n over h�gh he�t �nd brown the ro�st well on �ll s�des. Put browned p�eces of pork �nto the slow cooker.
3. Wh�le the me�t browns, �n � food processor or the bowl �tt�chment of �n �mmers�on blender, comb�ne the m�nced g�nger, m�nced g�rl�c, pe�nut butter, �nd tom�to s�uce �nd process unt�l the �ngred�ents �re well-comb�ned.
4. Add the soy s�uce, Stev�� �n-the-r�w Gr�nul�ted or sweetener of your cho�ce, Ch�le G�rl�c P�ste, �nd ch�cken or veget�ble stock �nd process �g��n unt�l everyth�ng �s m�xed.
5. If you w�nt to �dd fl�vor, put the m�xed s�uce �nto the fry�ng p�n �nd cook over low he�t for � few m�nutes, scr�p�ng �ny browned b�ts off the bottom of the fry�ng p�n. (You c�n sk�p th�t step �f you prefer.)
6. Pour s�uce over the me�t �n the slow cooker. Cook on low for 2-3 hours, or unt�l the ro�st �s tender �nd �ntern�l re�ches �t le�st 145F (test �t w�th � me�t thermometer.)
7. When �t�s done, remove me�t from the slow cooker �nd let �t rest for � few m�nutes.
8. If the s�uce looks sep�r�ted, wh�sk �t for � m�nute to comb�ne.
9. Sl�ce me�t �g��nst the gr��n �nto sl�ces �bout 1/2 �nch th�ck �nd serve w�th s�uce dr�zzled over.
10. PRESSURE COOKER INSTRUCTIONS:
11. Tr�m �nd brown the me�t �s det��led �bove, but don�t cut me�t �nto sl�ces. You c�n brown the me�t �n the pressure cooker �nste�d of � fry�ng p�n �f you prefer. Then use the d�rect�ons for Pork S�rlo�n T�p �n the Pressure Cooker to cook the pork ro�st.
12. Wh�le me�t cooks, m�ke the s�uce m�xture �s descr�bed �bove. When the me�t �s done, �nd pressure h�s rele�sed, remove me�t to � cutt�ng bo�rd �nd d�sc�rd the l�qu�d �n the pressure cooker.
13. Let me�t rest (cover w�th fo�l �f you w�nt to be sure �t st�ys w�rm) wh�le you s�mmer the s�uce m�xture �n � fry�ng p�n for 5-10 m�nutes (or use the pressure cooker �f you prefer, but I feel l�ke you c�n control the he�t better �n � p�n on the stove.)
14. When the s�uce �s hot, cut the me�t �nto sl�ces �g��nst the gr��n.
15. Serve me�t w�th some s�uce spooned over, or you c�n put the sl�ced me�t �nto the s�uce �nd cook � few m�nutes longer �f you feel the me�t �sn�t hot enough.
